This pineapple bowl is filled with soooo much flavor!! The spicy jerk along with the sweetness from the mango salsa is the perfect combination for your taste buds! This is also a party pleaser! Show up and show out when you serve these bowls at your next event!

This recipe makes enough for two.

If you don’t have mangoes, you can easily substitute with the leftover pineapples.


Jerk Chicken Pineapple Bowl Recipe

  • .Whole Pineapple

  • 1 cup Rice

  • 1 cup cooked broccoli

  • 2 cups water

Mango Salsa

  • 2 Mangoes

  • 1 Red Pepper

  • 1 Green Pepper

  • 1 Red onion

Jerk Chicken

  • 2 Chicken Breast

  • 1 tbsp Walkerswood Mild Jerk Marinade

  • 1 tbsp minced garlic

  • 1 tbsp cornstarch

  • 2 tbsp water

  • 1 cup water

  • 1/4 cup soy sauce

  • 1 tsp Salt

  • 1 tsp Pepper

  • 1 tsp Garlic Powder

  • 1 tsp Onion Powder


  1. Cut the pineapple in half lengthwise and carve out both sides.

  2. Pour 2 cups water into a pot and bring to a boil

  3. Add in 1 cup rice, cover and reduce heat to low

  4. Simmer for 20 mins. Do Not lift lid until ready.

Mango Salsa

  1. Dice Mangoes into small pieces.

  2. Dice peppers and onion

  3. Add all to large bowl, mix to combine

Jerk Chicken

  1. In a ziplock bag combine soy sauce, garlic and jerk marinade

  2. Season chicken breasts a nd add to ziplock bag

  3. Shake bag to cover chicken. Marinate in fridge at least 30 mins - overnight.

  4. When chicken is ready. Preheat oil in a pan.

  5. Reserve marinade from ziplock bag.

  6. Add chicken to pan and sear each side until brown (5-7 mins each side)

  7. Add marinade from ziplock bag to pan with 1 cup of water. Reduce heat to low, cover and let simmer for 20 mins.

  8. When done remove chicken breasts and let cool.

  9. Mix cornstarch and 2 tbsp water in small bowl.

  10. Add to marinade and bring to a low simmer.

  11. Simmer about 5 mins or until thickened to desired consistency.

  12. When chicken has cooled, chopped into pieces.

Assembling Pineapple

  1. Fill inside of pineapple with desired amount of rice.

  2. Top with broccoli, jerk chicken and mango salsa.

  3. Drizzle chicken with jerk marinade.

  4. Enjoy!
