Five Cheese Chicken Lasagna

I love love love lasagna! And now that I'm a mom of four I love it even more because it takes cooking off of my hands for a good two days! This recipe was actually my first time ever making lasagna the traditional way. Not sure why it seem so challenging to me back then because it is super easy to do. There's no way you can go wrong even if you're just starting out cooking.
If you're not a fan of red sauce you could definitely use a white sauce and this will still turn out perfectly! And if you want to slide some veggies in for the kids you could also add spinach to this recipe as well!
My girls absolutely love their veggies so a side salad and garlic bread were enough to satisfy them. And nothing, I mean nothing sets off finishing a meal the family loves like a glass of sweet red wine! Toast to yourself mommy for killing it in the kitchen yet again!

Shredded rotisserie chicken works well for this recipe.
Cream cheese will soften at room temperature
You don’t want DRY chicken so make sure to add in a little more broth as your chicken boils down to keep it juicy.
Use a hand mixer to quickly shred chicken
Cook noodles to al dente as they will finish cooking while baking!
Five Cheese Chicken Lasagna
INGREDIENTS
3 Chicken Breasts
1 Box of lasagna noodles
2 Jars of your favorite spaghetti sauce
2 cups of chicken broth or 2 chicken bouillon cubes added to 2 cups water
8oz cream cheese, softened
5 bags of shredded cheese of your choice (any kind will work!)
Italian Seasoning
Fresh Parsley for topping
DIRECTIONS
Preheat oven to 350.
Bring 2 cups of chicken broth or 2 cups water and 2 chicken bouillon cubes to a boil.
Add chicken and boil for 20 minutes or until they feel tender enough to shred and are no longer pink.
After boiling chicken for about 10 minutes, start boiling your lasagna noodles in a separate pot.
Once chicken is ready, remove chicken from pan and shred.
Reserve about a 1/4 cup of broth from the chicken.
Once noodles are ready, drain and set aside.
In a large bowl add in your shredded chicken, 8oz of cream cheese, 1 cup of shredded cheese, Italian seasoning and 1/4 cup of chicken broth.
Mix well.
In baking dish pour and spread 1/2 cup of spaghetti sauce on the bottom
Add noodles on top. (Cut noodles if needed to make even layers)
Layer chicken mix on top of noodles. Then add sauce.
From this step you can either add shredded cheese then noodles or just add another layer of noodles if you don’t want it too cheesy.
Repeat last two steps until you get to the top.
Cover with foil. Create a tint so that your cheese doesn’t stick to the top of the foil
Bake for 35 mins
Remove foil and bake for another 15 mins.
Remove from oven and let sit for 5 mins then serve
