I love omelets! I love eggs period, but eggs filled with meats and veggies is just next level for my taste buds! I could literally eat an omelet everyday for breakfast, but for some reason flipping it and cooking it to the right perfection is such a challenge for me! It always ends up over cooked or super runny in the middle (because I can never tell if it's the melted cheese or uncooked eggs) lol look, my omelets are a hot mess just take my word for it!

So I was so excited when I found this easy new way to get my perfect omelet! It is super simple and you can add any fillings you'd like just as you would with a regular omelet! On top of it all it looks cool as hell when plating lol so when you're serving this it just takes the look of your plate up!

Make this your own! You can add whatever you like and get a yummy result!

Adjust measurements to your family size. This recipe serves 1.

I used sausage, green & red peppers, onions and shredded cheddar cheese.

The filling list is endless but I'll list a few ideas.



  • 2 eggs

  • 1 tablespoon milk

  • 1 teaspoon Salt

  • 1 teaspoon Pepper

  • Non stick cooking spray

  • Your choice of meat (ham, chicken, sausage, chorizo, bacon, etc)

  • Your choice of cheese (cheddar, pepper jack, colby, monterey, etc.)

  • Your choice of veggies (spinach, green peppers, onions, etc)


  1. Preheat waffle iron.

  2. If using a meat cook it first.

  3. Dice up all veggies

  4. Add all ingredients (except meat) to small bowl and whisk until well combined.

  5. Add in meat and whisk until combined.

  6. Add mixture to waffle iron and cook until waffle indicator turns green.

  7. Serve with grits and fruit!

  8. Enjoy!
