Chicken Pot Pie with Biscuits - The Ultimate Comfort Food!

One of my favorite meals growing up were Chicken Pot pies. Funny thing is, Ive only had the freezer kind! Lol But now I have a delicious homemade Chicken Pot Pie recipe that's super easy to make! No pie crust needed! Needless to say I'll never eat a frozen pot pie again!

Simple and delicious are my favorite words to see when it comes to recipes! I love cooking homemade meals for the fam but if there's a way to get the same delicious taste with less hassle I'm all for it! And you can never go wrong with a delicious chicken pot pie during these cold winter months. Comfort food just does something to the soul .. am i right!? Or am I right!


Another big plus is that the items in this recipe can easily be stored as staples in your home so that anytime you want to whip up this quick meal it'll be a breeze! Not to mention its makes enough to have leftovers for a day or two! When you're a mom cooking for a big family, leftovers are key to survival! (Tell me if I'm lying......) lol

  • Rotisserie chicken works perfect for this recipe and will cut your prep time in half. Just shred it up and add it to your filling.

  • Instead of making a homemade broth you could also use 1-2 cans of cream of chicken soup.

  • Leftover turkey from the holidays will also work well as filling!

  • This recipe freezes and reheats well, so whatever your family doesn't just store in a tightly sealed bag to reheat at a later time.

  • You can use fresh or frozen veggies.


 

Chicken Pot Pie with Biscuits


INGREDIENTS: (adjust portions according to family size)

  • 2 Chicken Breasts or 2 cups shredded rotisserie chicken

  • 3 Tablespoon Butter (divided)

  • 2 Tablespoons of olive oil

  • 1 small onion minced

  • 1-2 stalks of celery chopped

  • 2 cloves garlic minced

  • 1 small bag of frozen mixed veggies

  • 1/4 cup flour

  • 1 teaspoon of thyme

  • 1 tablespoon parsley

  • 1 teaspoon salt

  • 1 teaspoon pepper

  • 1 1/2 cups chicken broth

  • 1/2 cup heavy cream (room temp)

  • 1 can of Pilsbury Biscuits


DIRECTIONS:

  1. Preheat oven to 375

  2. Mince onions, celery and garlic. set aside.

  3. In a medium pan, preheat olive oil

  4. Generously season chicken with salt and pepper

  5. Once oil is hot, add chicken and sear until browned on both sides

  6. Remove chicken once cooked through and set aside

  7. In same pan, melt 2 tablespoons of butter

  8. Add in onions and celery and cook 5-7 minutes

  9. Add in garlic and saute 1 additional minute

  10. Mix in frozen veggies and cook until softened

  11. Whisk in chicken broth, heavy cream and flour

  12. Whisk until there are no more lumps

  13. Season with salt, pepper, thyme and parsely. Taste filling and adjust seasoning

  14. Simmer over medium low heat about ten minutes or until filling has thickened to your desired consistency

  15. While filling is simmering, shred chicken

  16. Add chicken back to pot

  17. Spray a baking dish with non-stick cooking spray

  18. Pour filling into dish and spread evenly

  19. Place biscuits on top of filling and bake until biscuits are golden brown (10-12 mins)

  20. Serve fresh out the oven!

Optional

Brush biscuits with garlic butter for even more flavor!
