Chicken Meatballs with Gravy

Ground chicken has a bad rep! I’ve heard it’s not moist enough, has to be over seasoned, or is just down right nasty! And let me tell you, every single one of those are a lie! Ground chicken is perfect when you don‘t want to eat beef and a little tired of turkey. They pack so much flavor when cooked correctly! You won’t regret switching over to ground chicken!
Chicken Meatballs with Gravy Recipe
Ingredients
Meatballs
1 lb ground chicken
1/3 cup breadcrumbs
1/3 cup milk
1/2 yellow onion diced
1/2 green pepper diced
1 egg
Seasoned Salt
Garlic Powder
Onion Powder
Black Pepper
Gravy
2 cups chicken broth (or 2 cups water & 1 Chicken Bouillon cube)
1 tbsp Heavy Cream
1 tsp low sodium soy sauce
1 tsp onion powder
1 tsp garlic powder
1 tsp Dried Thyme
1/4 tsp Dried Sage
1/4 cup water
3 tablespoons cornstarch
Directions
Preparing Meatballs
In a large mixing bowl, add ground chicken and all remaining ingredients.
Mix to combine well.
Once, combined line a baking pan with a parchment paper or foil.
Gently roll meatballs (about 1 1/2 in thick).
Place meatballs on baking sheet and bake at 350 for 20 mins.
Remove from oven and let cool for 5 mins.
Preparing Gravy
In a sauce pan, add 2 cups chicken broth, seasonings and soy sauce.
In a separate bowl, combine 1/4 cup water and cornstarch.
Bring gravy to a boil, then slowly whisk in cornstarch slurry.
Reduce heat to medium low.
Continue to whisk, making sure it blends smoothly. Let simmer until desired thickness.
Reduce heat to low, add meatballs and let simmer 10 mins.
Serve with my delicious, Creamy Mashed Potatoes!
